Chicken and avocado salad


  • 2 boneless, skinless chicken breasts, poached and cut into small pieces

  • 2 avocados, diced

  • 1 small mango, cubed

  • 1 cup cherry tomatoes, quartered

  • 1/4 red onion, thinly sliced

  • 1/2 cup fresh or frozen corn

For the dressing

  • 1/4 cup lime juice

  • 3 tablespoons extra virgin olive oil

  • 2 tablespoons freshly chopped cilantro

  • 1 tablespoon chopped jalapenos

  • 2 teaspoons of honey

  • salt and pepper


  • Prepare the dressing: In a medium bowl, combine the dressing ingredients and season with salt and pepper.

  • In a salad bowl, chop the salad ingredients and drizzle with the prepared dressing. Toss gently until the salad is coated with the dressing, then season to taste with salt and pepper.
